Baking a chicken in tomyam : wah! Tender & Juicy

I decided to try baking a chicken like how it’s done as a Beggar’s Chicken but this time, using Tom Yam seasoning and using Limau Parut (kaffir lemon) as well as Lemongrass (Serai) to give it a sourish flavour. It turned out a lot better than I had expected.

Good Choices vs. Bad Choices

I’m sharing with you some stuff that I guess I do in therapy. You can either think I’m completely gone cuckoo or that I really have come to a point where I’m looking at how to make better food choices. I’m now starting to realized that I tend to have this really bad habit of just eating the food to have that temporary feeling of  fullness i.e. not starving = not hungry = happy. Well, happy for the moment anyways.

Step-by-Step Drop on the Chart

One thing that I frequently had to remind myself as I went out throughout 2009 was that it was a step at a time. That I wasn’t to hope for a miracle drop in weightloss. That there will be uphills and downhills as I went on this journey.

So the key tool that help me to monitor the weightloss (and manage my moodswings when things didn’t go well) was my scale. I remembered going out during a Sunday on the same week I got diagnosed with high blood pressure and bought a digital scale. I also made the affirmanation that I will be steadfast in my goal to reach my ideal weight, no matter how long it took but that I aim to lose 1 kg a week. That I was going to be brave enough to tell people how much I weigh and that nothing will dedract me from my goal, even if it meant having to put up with a lot of people’s comments.

It’s been now 10 months since I started. And there has been big mountains and I mean gigantic mountains. But I found that as soon as I went back onto the right track, everything came down again very very easily.

My new goal is to lose another 15kg by 1 Feb 2010 so that I can get off the high blood pressure medication the next time I see my cardiologist. It’s annoying having to swallow a little white pill all the time. But I’m definitely going to make it.

Why? Because I want to. :)

Coming to the end of 2009

It has been a long and busy year filled with ups and downs. So I wanted to share with you the fruits of my labour. And goodness, it was labourious.

Tada! The next update would be Christmas Party dinners, I should think. :)

Oh, one thing about comments. It’s a total mess at the moment because of the amount of spam that is coming through. Until Mr. Tucks is back from holidays, I don’t think there would be any change to the situation. So if I had accidentally deleted your comment or didn’t let it through, it’s because of the other 1,000+ spam comments. Can’t believe that Russians buy a lot of stuff just by reading spam online.

Prawn Rice Medley

One thing I’ve learnt from Japanese cooks, is that it’s possible to eat a rice dish without having to do much frying. How? Well, easy. Just mix the ingredients together while the rice is still warm. It cuts down the oil and the frying effect.

Then again, I suppose some “food purist” will say that I chopped up the veggies too small that any benefits from fibre is lost. I like eating small bits and pieces. Anything big is so unsightly when trying to eat it gracefully. Haha!

So, I made this prawn rice “medley” (as it’s called in one of my cookbooks, the cooking style of the rice that is). Was trying to get the sharp tangy taste of the ginger out but not successful. Need to use grated ginger juice and pulp methinks.

Lunch : Prawn Rice Medley

I stir-fried the ginger, garlic and onions with 1 teaspoon of olive oil. Then added in the prawns along with the Mirin sauce (1 tablespoon). After that, added in the cucumbers and celery for a quick turn around the pot. Then off the fire and mix in the rice and stir stir stir until well mix.

Lunch : Rice Medley with Prawn and Cucumber

The cucumbers were still a bit too big so next time, I’ll chop them up smaller. Also, probably will need to add in more veggies. Still not enough I think.

Anyway, when I heated it up in the microwave at the office, people were attracted by the smell. O.O

Progress update : Vavavoom! Haha!

Currently at 88kg. Total lost to date is 17 kg.
